Line a rimmed baking sheet with parchment paper and set aside.

Cut oranges into 1/4-inch slices, removing any seeds.

Combine sugar and water in a wide, large skillet. Over medium-high heat, bring the mixture to a boil, whisking until the sugar has dissolved.

Add orange slices in an even layer (you may need to cook in batches). Bring the liquid to a simmer and cook uncovered for approximately 1 hour, until the orange slices look transparent.

Transfer orange slices to the prepared baking sheet. Allow them to dry uncovered for at least 24 hours. They will still be slightly sticky when done.

Place chocolate melting wafers in a bowl and melt in 10-15 second microwave increments, stirring between each, until smooth. Alternatively, use a double-boiler over medium-low heat.

Dip each slice halfway into the melted chocolate and return to the parchment-lined baking sheet. Immediately sprinkle with flaky salt if using.

Allow chocolate to harden for at least 15 minutes before serving or storing.
