01 - 4 large bell peppers (orange, red, or yellow)
02 - 1 lb (450g) ground beef
03 - 1 cup cooked rice
04 - 1 small onion, chopped
05 - 2 cloves garlic, minced
06 - 1 can (400g) diced tomatoes, drained
07 - 1 tsp cumin
08 - 1 tsp paprika
09 - Salt and pepper to taste
10 - Black olives (optional)
11 - 1 cup shredded cheddar cheese

# Steps:

01 - Preheat the oven to 375°F (190°C).
02 - Cut the tops off the bell peppers and remove the seeds and membranes. Carve creepy faces into the sides of the peppers.
03 - In a skillet, brown the ground beef with the onion and garlic until cooked through. Drain any excess fat.
04 - Stir in the cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.
05 - Fill the carved peppers with the beef and rice mixture and place them in a baking dish.
06 - Cover with foil and bake for 30 minutes.
07 - Remove the foil, sprinkle the tops with shredded cheddar cheese, and bake for an additional 10 minutes, until the cheese is melted.
08 - Serve hot. Replace the pepper tops if desired to resemble pumpkins. For extra visual effect, add sliced olives as 'eyes'.
