Cut the tops off the bell peppers and remove the seeds and membranes. Carve creepy faces into the sides of the peppers.

In a skillet, brown the ground beef with the onion and garlic until cooked through. Drain any excess fat.

Stir in the cooked rice, diced tomatoes, cumin, paprika, salt, and pepper.

Fill the carved peppers with the beef and rice mixture and place them in a baking dish.

Cover with foil and bake for 30 minutes.

Remove the foil, sprinkle the tops with shredded cheddar cheese, and bake for an additional 10 minutes, until the cheese is melted.

Serve hot. Replace the pepper tops if desired to resemble pumpkins. For extra visual effect, add sliced olives as 'eyes'.
