Beef Stroganoff Tortellini Skillet (Print Version)

Cheese tortellini and ground beef combined in a rich, creamy sauce for a quick, comforting skillet dinner ready in 30 minutes.

# Ingredients:

→ For the Sauce

01 - 1 lb ground beef (80/20 for best moisture)
02 - 1 medium yellow onion, diced
03 - 2 cloves garlic, minced
04 - 1 tablespoon Dijon mustard
05 - 1 tablespoon Worcestershire sauce
06 - 2 cups beef broth

→ For the Tortellini

07 - 1 package refrigerated cheese tortellini
08 - 1 cup sour cream

→ Cooking Essentials

09 - 2 tablespoons olive oil
10 - Salt to taste
11 - Black pepper to taste

→ For Garnish

12 - 2 tablespoons chopped fresh parsley

# Steps:

01 - Heat a large skillet over medium-high heat. Cook the ground beef for about 5-7 minutes until browned, breaking it apart with a spatula.
02 - Toss in the diced onion and minced garlic, sautéing for 2-3 minutes until softened and translucent.
03 - Add the Dijon mustard and Worcestershire sauce, stirring well. Then pour in the beef broth, scraping up the browned bits for extra flavor.
04 - Stir in the cheese-filled tortellini, cover the skillet, and let it simmer for 5-7 minutes until the tortellini are tender.
05 - Remove the skillet from heat and gently fold in the sour cream until creamy. Adjust seasonings with salt and pepper, and sprinkle with parsley before serving.

# Notes:

01 - Frozen tortellini can be used but requires longer cooking time.
02 - For a vegetarian option, substitute mushroom broth for beef broth.
03 - The olive oil can be omitted if the beef contains sufficient fat.
04 - Full-fat sour cream produces the creamiest results, but dairy-free alternatives work well too.
