02 - 1/4 cup shredded mozzarella cheese

06 - 1 cup zucchini, sliced
07 - 1 cup cherry tomatoes, halved
08 - 1/2 cup spinach, chopped
09 - 1/2 cup red onion, finely chopped

10 - 1 tablespoon olive oil
11 - Cooking spray or additional olive oil for greasing

12 - 1 teaspoon garlic powder
13 - 1 teaspoon onion powder

# Steps:

01 - Preheat oven to 190°C. Lightly grease a baking dish with cooking spray or olive oil.

03 - In a separate bowl, whisk together eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
04 - Pour the egg mixture over the vegetable mixture and stir until everything is evenly coated.
