# Ingredients:

01 - 6 cups Rice Krispies cereal
02 - 3 tablespoons unsalted butter
03 - 3 cups mini marshmallows (half yellow lemon-flavored, half classic white recommended)
04 - Zest of 1 lemon (plus extra for garnish)
05 - 1/2 teaspoon lemon extract (optional)
06 - 1/2 cup white chocolate chips or melting wafers
07 - Lemon peel or zest, for garnish

# Steps:

01 - Grease a 9×9-inch baking pan or line with parchment paper for easy removal.
02 - In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir until completely melted and smooth. Stir in the lemon zest and lemon extract (if using).
03 - Remove from heat and immediately stir in the Rice Krispies cereal until well coated.
04 - Press the mixture evenly into the prepared pan using a buttered spatula or wax paper. Maintain a gentle touch to ensure treats remain soft and chewy.
05 - Melt the white chocolate chips in the microwave in 20-second intervals, stirring until smooth. Drizzle over the top of the bars. Finish with a sprinkle of lemon zest or fine curls of lemon peel.
06 - Allow the treats to cool and set for at least 30 minutes. Cut into squares before serving.
