01 -
Preheat the oven to 220°C (425°F).
02 -
Wash the potatoes, leaving the skins on and cut them into 8mm (1/3-inch) wide sticks. Ensure each fry maintains the same length as the potato.
03 -
Place the fries in a large bowl filled with cold water and soak them for 10 to 15 minutes. Drain and dry them thoroughly.
04 -
Add the fries into a large mixing bowl and toss them with olive oil, salt, dried oregano, dried dill, black pepper and garlic powder.
05 -
Line a baking sheet with parchment paper. Spread the potatoes out into an even layer.
06 -
Bake the fries for 15 minutes, then take them out of the oven and carefully flip them. Return to the oven and bake for additional 6 to 8 minutes, or until they are crisp and golden brown.
07 -
Transfer the baked fries to a serving plate, sprinkle with finely chopped parsley, red onion and crumbled feta cheese.
08 -
Serve with tzatziki, aioli and/or lemon wedges. Best enjoyed warm.
