Glazed Apple Cinnamon Oatmeal Bread (Print Version)

Ridiculously soft and moist bread bursting with apple flavor, enhanced with oats, cinnamon, and topped with a sweet glaze.

# Ingredients:

→ Bread

01 - 2 cups all purpose flour
02 - 1 cup old fashioned oats
03 - 1/4 teaspoon salt
04 - 2 teaspoons cinnamon
05 - 2 teaspoons baking powder
06 - 1 cup granulated sugar
07 - 3/4 cup vegetable oil
08 - 2 eggs beaten
09 - 1/2 cup plain nonfat Greek yogurt
10 - 1 cup applesauce (homemade or chunky style preferred)
11 - 1/2 teaspoon vanilla extract

→ Glaze

12 - 1 cup powdered sugar
13 - 1/4 cup applesauce

# Steps:

01 - Preheat oven to 350°F (175°C) and grease a 9.25 × 5.25 × 2.75 inch metal nonstick loaf pan.
02 - In a large bowl, combine flour, oats, salt, cinnamon, and baking powder. Set aside.
03 - In a separate bowl, combine sugar, oil, eggs, yogurt, applesauce, and vanilla extract.
04 - Gently fold wet ingredients into dry ingredients by hand until just combined, being careful not to overmix.
05 - Transfer batter to the prepared loaf pan and bake for 45-48 minutes, or until a toothpick inserted into the center comes out clean.
06 - While bread is cooling slightly, whisk together powdered sugar and applesauce to create the glaze.
07 - Pour glaze over the slightly cooled bread, allowing it to settle into cracks. Note that the glaze will set but remain slightly sticky.
