Forgotten Chocolate Chip Meringues (Print Version)

Delicate meringue cookies with chocolate chips that crisp in the oven and develop incredible flavor as they rest overnight.

# Ingredients:

01 - 2 large egg whites
02 - 1 cup granulated sugar
03 - ½ teaspoon vanilla extract
04 - ¼ teaspoon salt
05 - 1 cup semi-sweet chocolate chips

→ Optional Garnishes

06 - Whipped cream for serving
07 - Chocolate shavings or sprinkles

# Steps:

01 - Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a clean and dry mixing bowl, whisk the egg whites until soft peaks form, about 2-3 minutes.
03 - Slowly incorporate the granulated sugar into the whipped egg whites, continuing to whisk until stiff peaks form, about 3-4 minutes more.
04 - Gently add the vanilla extract and salt, stirring until fully combined.
05 - Carefully fold in the chocolate chips, ensuring they are evenly distributed throughout the mixture.
06 - Using a spoon or cookie scoop, place dollops of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
07 - Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until they are lightly golden and the tops are crisp.
08 - Once done, remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
09 - For optimal flavor development, allow the cookies to rest for at least 4 hours or overnight.

# Notes:

01 - These meringue-based cookies are called 'forgotten' because they're often placed in a warm oven that's turned off and left overnight to dry out slowly.
