Everything Bagel Bean Salad (Print Version)

Vibrant bean medley with mozzarella pearls and zesty vinaigrette featuring the beloved everything bagel seasoning blend.

# Ingredients:

→ Vinaigrette

01 - ¼ cup extra virgin olive oil (60 mL)
02 - 2 Tbsp red wine vinegar (30 mL)
03 - 2 tsp Dijon mustard
04 - 2 tsp poppy seeds
05 - 2 tsp sesame seeds
06 - 1 tsp garlic powder
07 - 1 tsp onion powder
08 - 1 tsp dill
09 - ½ tsp salt
10 - ¼ tsp ground black pepper

→ Salad

11 - 1 can chickpeas (15-oz/425-g), drained and rinsed
12 - 1 can white beans (15-oz/425-g), drained and rinsed
13 - 1 cup finely diced celery (about 3 stalks)
14 - 1 green bell pepper, finely diced
15 - 1 English cucumber, finely diced
16 - 4 Tbsp finely chopped chives
17 - 1 package fresh mozzarella pearls (8-oz/226 g)

# Steps:

01 - Whisk together olive oil, red wine vinegar, Dijon mustard, poppy seeds, sesame seeds, garlic powder, onion powder, dill, salt, and pepper in a small bowl until well combined.
02 - In a large mixing bowl, combine drained chickpeas, white beans, diced celery, green bell pepper, cucumber, and chives.
03 - Gently fold in the fresh mozzarella pearls.
04 - Pour the vinaigrette over the salad ingredients and toss until everything is evenly coated.
05 - Serve immediately or refrigerate for up to 4 days for meal prep.

# Notes:

01 - White wine vinegar can be substituted for red wine vinegar if needed.
02 - The salad keeps well in the refrigerator for meal prep purposes.
