Soak wooden skewers in water for at least 30 minutes before beginning preparation.

Combine chicken seasoning mixture in a small bowl. Cut chicken into 3-inch pieces and place in a large bowl or ziplock bag. Toss with olive oil and spice mixture until evenly coated.

Thread chicken pieces onto skewers, packing tightly with no space between pieces to ensure maximum juiciness. If necessary, trim skewer ends to fit your air fryer.

Combine butter and minced garlic in a microwave-safe bowl and heat until partially melted. Add red pepper flakes, hot sauce, parsley, and parmesan. Whisk until thoroughly combined. If sauce separates, add 1-2 tablespoons of softened butter and stir to re-emulsify.

Reserve 2/3 of the sauce for final basting. Use the remaining 1/3 for basting during cooking to prevent cross-contamination. Always wash your basting brush between applications.

Cook 2-3 skewers at a time in an air fryer at 200°C (400°F) for 5 minutes. Remove, flip, and baste with sauce. Return to air fryer for 2 minutes. Flip again, baste, and cook for final 5-6 minutes until internal temperature reaches 74°C (165°F). Total cooking time is approximately 12-14 minutes, varying by air fryer model.
