Heat a large pot over medium-high heat and add the butter. Once melted, add the cubed steak and cook until browned on all sides. Remove the steak from the pot and set aside.

In the same pot, add the onions and garlic. Sauté for 2-3 minutes until softened and fragrant.

Add the diced potatoes, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

Add the cooked steak back to the pot along with the heavy cream and milk. Stir to combine, then let simmer for another 5-7 minutes to heat through and thicken slightly.

Taste and adjust seasoning, adding more salt, pepper, or paprika if needed.

Serve hot, garnished with fresh parsley and a sprinkle of fresh thyme if desired.
