Creamy Gnocchi Chicken Soup (Print Version)

# Ingredients:

01 - 2 tablespoons extra virgin olive oil
02 - 1 yellow onion, chopped
03 - 6 carrots, chopped
04 - 4 celery stalks, chopped
05 - 2 tablespoons salted butter
06 - 2 tablespoons all-purpose flour

07 - 750g boneless skinless chicken breasts or thighs
08 - 2-4 cloves garlic, chopped
09 - 1 tablespoon Italian seasoning
10 - 1 teaspoon paprika or smoked paprika
11 - 2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
12 - 1 pinch chili flakes
13 - 1 pinch each kosher salt and black pepper

→ Liquids & Vegetables

14 - 1-1.5 liters low sodium vegetable broth
15 - 1/2 cup chopped sun-dried tomatoes
16 - 4-6 cups baby spinach
17 - 1 1/2 cups canned coconut milk, heavy cream, or whole milk
18 - 1/2 cup grated parmesan
19 - 500g fresh potato gnocchi

# Steps:

01 - In a large soup pot over medium heat, add olive oil and onion. Cook for 5 minutes until fragrant. Add the carrots and celery, continuing to cook for another 3 minutes until vegetables begin to soften.
02 - Stir in butter and flour, cooking for 1 minute to remove raw flour taste. Add chicken, garlic, Italian seasoning, paprika, thyme, chili flakes, salt, and pepper. Toss to thoroughly coat meat in the spice mixture.
03 - Pour in 4 cups of broth and bring to a gentle simmer. Cook over medium heat for 20 minutes, or until chicken is completely cooked through and tender.
04 - Remove chicken pieces from the soup. Using two forks, shred the meat into bite-sized pieces, then return it to the pot.
05 - Add spinach, sun-dried tomatoes, cream/milk, parmesan, and gnocchi to the pot. Simmer until all ingredients are warmed through and gnocchi is tender, approximately 5 minutes. If soup consistency is too thick, adjust with additional broth.
06 - Ladle soup into bowls and garnish with additional grated parmesan. Serve immediately with crusty bread for an enhanced dining experience.

# Notes:

01 - For homemade Italian seasoning, mix 2 tablespoons dried basil, 2 tablespoons dried oregano, 2 teaspoons dried thyme, 1 teaspoon dried rosemary, and 1 teaspoon dried sage. Store in a sealed container.
02 - This hearty soup can be stored in an airtight container in the refrigerator for up to 3 days. The gnocchi may absorb liquid during storage, so additional broth might be needed when reheating.
