Cranberry Orange Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 cups all purpose flour
02 - 3/4 cup sugar
03 - 1 tablespoon baking powder
04 - 1/2 teaspoon baking soda
05 - 1/2 teaspoon salt
06 - 1/2 teaspoon cinnamon

→ Wet Ingredients

07 - 2 large eggs, slightly beaten
08 - 225g (8 oz) canned whole cranberries in sauce
09 - Zest and juice of 1 large orange
10 - 2 tablespoons applesauce
11 - 1/2 teaspoon almond extract
12 - 2 tablespoons vegetable or canola oil

# Steps:

01 - Preheat oven to 175°C (350°F). Spray or grease your bread loaf pan.
02 - In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
03 - In another bowl, thoroughly mix together the beaten eggs, cranberries, orange zest, orange juice, applesauce, almond extract, and oil.
04 - Add the wet ingredients to the dry ingredients. Mix just until incorporated, being careful not to overmix.
05 - Pour batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

# Notes:

01 - For muffins, pour batter into greased muffin tins, filling each about 2/3 full. Bake for 20-23 minutes or until a toothpick inserted in the center comes out clean.
