Creamy Coconut Lime Chicken (Print Version)

Juicy chicken breasts in a creamy coconut lime sauce, pan-seared and baked to perfection in under 30 minutes.

# Ingredients:

→ Chicken & Coating

01 - 2 lb boneless skinless chicken breasts (approximately 4 pieces)
02 - 1/4 cup all-purpose flour
03 - 1/4 cup fresh cilantro, chopped, plus extra for garnish
04 - Salt and pepper to taste

→ Cooking Oils

05 - 2 tbsp coconut oil
06 - 1 tbsp olive oil

→ Sauce

07 - 1 cup coconut milk
08 - 2/3 cup chicken broth
09 - 1 tbsp brown sugar or coconut sugar
10 - 2 limes, juiced (divided)
11 - 1 garlic clove, minced

→ Garnish

12 - 1 green onion, chopped

# Steps:

01 - Preheat oven to 375°F (190°C).
02 - Heat a large, oven-safe skillet or dutch oven over medium heat, then add the coconut oil and olive oil.
03 - Combine the flour and chopped cilantro in a bowl, then dip each chicken breast into the mixture until evenly coated.
04 - Place coated chicken directly into the hot skillet. Pan-sear for 3-4 minutes per side, or until slightly browned. When chicken is almost done, add the minced garlic and cook for 30 seconds until fragrant.
05 - While chicken is searing, combine the coconut milk, chicken broth, sugar, and juice from 1 lime in a bowl, stirring until well mixed.
06 - Remove skillet from heat, then pour the coconut milk mixture over the chicken. Transfer skillet to the preheated oven and bake for 10-15 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
07 - Remove skillet from the oven and drizzle the remaining lime juice over the chicken. Season with salt and pepper to taste, then garnish with additional chopped cilantro and green onions before serving.

01 - Cook times may vary depending on the thickness of chicken breasts.
02 - For more servings, slice the chicken breasts in half lengthwise to create 8 thinner pieces.
03 - To make this recipe gluten-free or Paleo-friendly, substitute arrowroot starch for all-purpose flour.
04 - For a Whole30 compliant dish, use arrowroot starch instead of flour and omit the sugar entirely.
