Chipotle Sauce with Garlic (Print Version)

A smooth, smoky blend of chipotle peppers, garlic, and sour cream that adds creamy heat to any Mexican-inspired dish.

# Ingredients:

01 - 1 cup sour cream
02 - ¼ cup mayonnaise
03 - 2 whole chipotle peppers in adobo sauce
04 - 1 tbsp adobo sauce (from chipotle peppers)

→ Aromatics & Seasonings

05 - 2 cloves garlic, minced or roasted
06 - 1 tbsp fresh lime juice
07 - ½ tsp smoked paprika
08 - ½ tsp cumin
09 - ½ tsp salt, or to taste
10 - 1 tbsp olive oil (optional)

# Steps:

01 - If you want a mellower garlic flavor, roast the garlic in a dry skillet over medium heat for about 5 minutes or until golden and soft. Roughly chop the chipotle peppers so they blend easier.
02 - In your blender or food processor, combine sour cream, mayonnaise, chopped chipotle peppers, adobo sauce, garlic, lime juice, paprika, cumin, and salt. Blend until the mixture is completely smooth. This should take about 30–60 seconds depending on your blender.
03 - Give the sauce a quick taste. Want more heat? Add another half a pepper or a dash of the adobo sauce. Too spicy? Add more sour cream. You can also adjust salt and lime juice to your liking.
04 - If the sauce is too thick, add a splash of olive oil or a teaspoon of water to loosen it. Blend again briefly.
05 - Transfer the sauce to a glass jar or airtight container. Let it chill in the fridge for at least 30 minutes if you can—it helps the flavors meld beautifully.

01 - For a healthier version, substitute Greek yogurt for the sour cream.
02 - The sauce develops better flavor after chilling for at least 30 minutes.
