Chicken Parmesan Mac & Cheese (Print Version)

A quick, creamy comfort dish combining Italian flavors with cheesy pasta, all made in one pot for minimal cleanup.

# Ingredients:

→ Proteins & Basics

01 - 2 tablespoons olive oil
02 - 2 boneless, skinless chicken breasts, cut into bite-sized pieces
03 - Salt and pepper, to taste

→ Aromatics

04 - 3 cloves garlic, minced
05 - 1 teaspoon Italian seasoning

→ Pasta & Liquids

06 - 2 cups uncooked elbow macaroni
07 - 3 cups chicken broth
08 - 1 cup milk (whole or 2%)
09 - 1 cup marinara sauce

→ Cheeses & Garnish

10 - 1 ½ cups shredded mozzarella cheese
11 - ½ cup grated Parmesan cheese
12 - Fresh basil or parsley for garnish (optional)

# Steps:

01 - Heat olive oil in a large skillet or pot over medium-high heat. Season the chicken pieces with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
02 - In the same pot, add minced garlic and sauté for about 1 minute, or until fragrant.
03 - Add the uncooked macaroni, chicken broth, milk, marinara sauce, and Italian seasoning to the pot. Stir well to combine. Bring the mixture to a boil, then reduce the heat to medium-low and cover. Simmer for about 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
04 - Stir in the cooked chicken, mozzarella cheese, and Parmesan cheese until melted and creamy. Remove from heat, garnish with fresh basil or parsley if desired, and serve warm.

# Notes:

01 - Leftovers can be stored in an airtight container in the fridge for up to 3 days.
02 - To reheat, add a splash of milk or chicken broth to loosen the sauce, and warm on the stove or microwave.
03 - For a spicier version, add red pepper flakes or hot sauce.
04 - Feel free to add more veggies like spinach, mushrooms, or bell peppers to make it heartier.
