Cheesy Ground Beef and Potatoes (Print Version)

01 - 1 lb ground beef
02 - 1 tablespoon olive oil
03 - 1 medium onion, chopped
04 - 2 cloves garlic, minced
05 - 3 medium potatoes, peeled and diced
06 - 1 cup shredded cheddar cheese
07 - 1/2 cup beef broth

09 - 1/2 teaspoon black pepper
10 - 1 teaspoon paprika
11 - 1/2 teaspoon dried oregano
12 - 1 tablespoon fresh parsley, chopped

# Steps:

01 - Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
02 - Add the chopped onion and minced garlic to the skillet. Cook for 3-4 minutes, or until the onion is softened and fragrant.
03 - Add the diced potatoes to the skillet and season with salt, pepper, paprika, and dried oregano. Stir to combine.
04 - Pour in the beef broth and cover the skillet. Reduce the heat to low and cook for 20-25 minutes, or until the potatoes are tender and the liquid has mostly absorbed.
05 - Sprinkle the shredded cheddar cheese over the beef and potatoes. Cover again and cook for 2-3 minutes, or until the cheese has melted.
06 - Garnish with freshly chopped parsley before serving.
