Buckeye Graham Crackers (Print Version)

Graham crackers topped with creamy peanut butter filling and coated in rich chocolate for an irresistible no-bake treat.

# Ingredients:

01 - 12 graham crackers, broken in half
02 - 1 1/2 cups creamy peanut butter
03 - 1/2 cup (1 stick) butter, softened
04 - 2 1/2 cups powdered sugar
05 - 1 tsp vanilla extract
06 - 3 1/2 cups semi-sweet chocolate chips
07 - 4 tbsp vegetable oil, divided
08 - 1 cup peanut butter chips

# Steps:

01 - Break each graham cracker sheet in half into squares. Place the graham crackers on a lined baking sheet, then set aside.
02 - In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth.
03 - Roll the peanut butter mixture into 1-inch sized balls, then place 1 ball onto each graham cracker.
04 - Carefully flatten the peanut butter balls onto the surface of each graham cracker, spreading all the way to the edges.
05 - In a microwave safe bowl, combine chocolate chips and 3 tbsp vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
06 - Coat each graham cracker in the melted chocolate, let any excess chocolate run off, then transfer back to your prepared baking sheet.
07 - Once all the graham crackers are covered, combine peanut butter chips and 1 tbsp vegetable oil in another microwave safe bowl and microwave in 30 second intervals, stirring in-between, until melted and smooth.
08 - Drizzle the melted peanut butter chips over each chocolate coated graham cracker, then transfer to the fridge to set the chocolate before enjoying!

01 - These buckeye graham crackers need to chill for at least 30 minutes to set properly.
